This is a great way to cook a less tender cut of beef such as round steak


1 to 2 lb round steak

Olive oil

Fresh ground pepper to taste

Sprinkle of salt

Flour

1 cup chopped onion

1 cup sliced green pepper

½ cup sliced celery

250 ml chopped fresh or canned tomatoes

1-2 tablespoons beef concentrate such as Bovril

200 ml boiling water

Pound both sides of the steak with a meat mallet. Cut into serving pieces (approx. 2-3 inches around). Coat both sides of meat with flour.

Heat olive oil in dutch oven and brown each piece of steak on both sides. Remove steak to another plate until all meat is browned. Add onion to dutch oven, place meat on top of onion, add remaining vegetables, beef concentrate and boiling water.

Cook in 275’ F oven for the afternoon.

Thicken the broth with a tablespoon of cornstarch in cold water. I usually serve this with a big bowl of hot rice.
